We sat down with JT to see how he creates.

@Goldies.Houston is one of the many local chefs

in the incredibly vast community of Houston culinary. So in a scene full of so many talented chefs, how does one stick out above the rest? Just ask JT.

Under the name Goldies.Houston, JT runs a pop-up shop around Houston, mainly cooking for Grand Prize Bar every Tuesday.

The idea of food came from him wanting to get out of trouble and make a future for himself. He tried to find his creative outlet and found food to be his calling. 

What started out as the “Golden Oyster” oyster bar turned into his current identity of Goldies.Houston where he specializes in Wings and Rice, two food items he knows people can come to for comfort. 

“At the end of the day, as a creator and someone who is working and trying to be good, you can be your own worse critic. But when there are people giving you positive feedback, that is always great. And you know it’s true because they keep coming back.”

However, there is still one food item he wishes he could make.

JT’s grandmother played a large influence in his life and career path. Having such a strong cook around inspired him to pursue the food industry and wishes that he could make one of his favorite dishes with his grandmother, tomato crab soup, and describes it as his dream collaboration.

This passion has given JT the skills he believes everyone needs to have such as responsibility, hard work ethic, and integrity. He knows that in order to have a successful business, which is what he plans for the future. He is currently working on his long-term goal of running his own brick and mortar with his food.

Above all, there is one thing that JT has more passion for than his food; being a good father. The legacy he wants to leave beside his food is that he was a good father, and he believes he’s doing a damn good job so far. 

In the meantime, he loves getting to know other likeminded individuals around Houston who share the same passion and spirit that he has for his craft, and sharing his creativity the best way he knows how; in the kitchen. 

“We are cooking to make money and to make a good product. But we are not one of these restaurants or pop-ups that are always worried about making a dollar and the bottom line. 

We want to put care into our food and procure and sort the right ingredients.”  - @Goldies.Houston
